Quick and Delicious Paleo Chicken Soup

Building off of yesterday’s post about the potential for chaos after a long day of work, my husband and I have really been experimenting with quick and easy Paleo dinner ideas. We both crave big flavors, so just pulling a pre-made, store bought dinner together, is usually not what we are looking for. But I also know that I am not, either by my desire, or by the time in my day, going to be the person who makes everything from scratch.

One of our go to winter meals recently has been this amazing chicken soup. We can even get our two year old to eat elements of the dinner and that’s really all I try for these days. Below you will find the recipe how we make it to fit Paleo/low carb model, but you could easily dress it up (and we have in the past) with corn, crushed tortilla chips, canned black beans, etc.

This can be either made on the stove in about 30 minutes or prepped and simmered in a slow cooker before you leave for work. The longer the flavors mix the better!

Ingredients for about 4 servings:

2 Avocados

2 pounds of boneless skinless chicken breasts

48 ounces of chicken borth

1 punch of cilantro

4 spoonfuls of minced garlic (save yourself time and buy the pre-minced garlic)

1 large jalapeño or 2 small

1 lime

4 tomatoes

1 yellow onion

2 tablespoons of olive oil

Salt to taste (about 1-2 teaspoons)

Pepper to taste (about 1 teaspoon)

1 teaspoon of cumin

Instructions:

  1. Seed and mince jalapenos and dice tomatoes
  2. Peel and dice onion
  3. In a large pot, over medium high, heat up olive oil
  4. Once hot, add tomatoes along with minced garlic. Cook until fragrant, about 1 minute.
  5. Slice chicken into fillets horizontally.
  6. Add to your pot the chicken broth, cumin, salt and pepper.
  7. Add your chicken and bring to a boil. Reduce to medium heat and cover. Cooking until chicken is done, about 10 minutes.
  8. Once chicken is cooked, remove to bowl and shred by hand or with two forks.
  9. Chop cilantro and 3/4s of this, along with the shredded chicken and the juice of your lime to the pot.
  10. Dice avocado
  11. To serve, spoon into bowl and top with remaining cilantro and avocado.
  12. Enjoy!!
