When we decided to eat in a more Paleo, whole foods model, breakfast became a bit of a challenge to find dishes that a toddler would like and to add enough variety in for the husband. Once I decide to eat a certain way, I can eat the same foods over and over again, but realize that most people aren’t wired that way. This simple pancake recipe has been a major winner. So much so that we usually eat it once a weekend now. It satisfies a sweet tooth but also gives all of us necessary protein to fill us up.
Toppings can be changed up depending on your preference and what your nutrition goals are. I usually top with just mixed berries and honey on mine and add coconut milk whipped cream to my daughters. Occasionally, I will add a spoonful of almond butter.
Ingredients that will serve 3-4:
3 well-ripened bananas
6 eggs
About a teaspoon of salt
About a teaspoon of cinnamon depending on your liking
1 scoop of protein powder. I use Ritual Essential Protein because it is plant based and sugar free with clean ingredients. https://ritual.com/products/essential-protein-daily-shake-18
Instructions:
- Mash banana and beat in eggs
- Add salt, cinnamon, and protein powder. Mix to combine
- Heat up pan on stove. I use Pam on the pan and find it much easier to cook on the stove then on a pancake griddle as these tend to be runnier than standard pancakes. I also only cook one at a time.
- Cook until well-formed and can flip. Pancake should be lightly browned and cooked through like an omelet.
- Top with honey and berries or toppings of your choice.
- Enjoy! I find these can also save in the fridge for a day or two for a quick Monday morning meal before heading out the door.
